In a large mixing bowl, combine the juice of ½ a lemon, the honey, and the olive oil. Whisk to combine, then add more lemon, honey, or olive oil to taste if desired.
Add peaches, cherries, half of the pickled shallots, and half of the mint to the bowl with the dressing. Toss to combine, then transfer to a serving bowl.
Garnish with the feta cheese and the remaining shallots and mint. Enjoy!
